Sunday Salutations and Snickerdoodles
You might have noticed that Tod has been handling a lot of blogs recently. I have been a bit under the weather. In addition, life has been a bit up and down and I have not rolled with it gracefully. However, the downs have helped me realize that I have wonderful people in my life. And make me hope that I have it in me to be half as helpful, kind, and caring as they have been over these last few weeks. Maybe it is a case of fake it till you make it. We will see.
So, I am making cookies for some people at work that have been helpful and for the people at home that walked with me in my inner turmoil. What is a better “thank you” than cookies?
Here is recipe for Snickerdoodles with almond butter and almond flour – because everyone needs a bit of spice in their lives.
Dough – Dry
1 cup almond flour
1/4 cup tapioca flour
1/2 tsp of salt
1/2 tsp cream of tartar
2 tsp ground cinnamon
Dough – Wet
1/4 cup ghee
3/8 cup almond butter
2 tbsp date sugar
1 tsp vanilla extract
2 egg replacements
Topping
3 tbsp maple sugar
2 tsp cinnamon
1/2 tsp vanilla powder
Instructions
For the dough, mix dry ingredients above in one bowl. Sift the flour into the bowl when mixing. Mix wet ingredients in another. Add wet mix to dry mix. Mix combination well.
Mix the topping into a second bowl.
Make small round cooking and roll them in the topping.
Place on a greased cookie sheet.
Cook for 10 minutes in 350.
Remove, let cool, and devour at need.
