Is there a particular kind of potato that you use? I've always been like the original Iron Chef Japanese Morimoto "ingredients have no borders". But I have discovered certain properties work better in certain dishes, like soups. -Tod
I always used Russet or sweet potatoes. Anna got me interested in other potatoes. And if you eat AIP (Auto Immune Protocol) Paleo, boniato potatoes are good too. (Sweet and boniato are better for AIP issues.)
I don't eat any potatoes now (or for a long time!) I'm Keto/ketovore (carnivore with a little keto) I've been studying Oxalate issues recently, and may have to reduce that now, too... I do cheap now and again...and then suffer for days after...(why do we do that to ourselves?)
Lovely soup! reminds me of Irish Coddle, if you leave out the cream/milk, garlic and arrowroot slurry, the rest is right on.
