Cookies and Writing
Busy Sunday. Â
We managed read through and submit another short story and do the first read through of another we plan to submit Monday. Our basic process is brainstorm together, one of us writes, the other does a content edit, then Tod does a grammar edit, before we listen to the story. For the read aloud edit, I will have a print out and Tod will be at the computer, the story will be read by our friendly computer voice. We do this read aloud twice for each story. It doesn’t mean we will catch all the errors, but our goal is to catch the most glaring. However, it does takes a lot of time. This weekend we manage to do three read aloud edits! Yay!
In addition to that, we did the normal weekend chores. I made us waffles, and I made cookies for the a few neighbors. My cookies (and waffles) are odd in the sense that I don’t use standard flours. I am on a 4 month diet which involves, cutting out almonds, coconut in addition to gluten which I cut out a while ago. However, almond and coconut were my go to replacement for flours. They also tend to be the go to replacement for most paleo or gluten free baking recipes. So, I get to experiment, which is a lot of fun.Â
One of neighbor ladies was kind enough to suggest I try to sell them to people and/or sell them to bakeries. I think most bakers would have their own recipes, but she did comment that because I made them with out normal flours or sugars that people would be interested. Instead, I decided, I would post them here.Â
While, this blog is not for food per say, I do like posting recipes that I make up. However, I do need to get better at photographing them.  I might have to enlist Tod’s help on that.Â
Here is the Gluten-Free, Nut-Free, Vegan*, Chocolate Chip Cookie Recipe. (24 small cookies)

* vegan only if you replace the eggs, which I am doing right now due to diet of doom.Â
Dry Ingredients
1 cup of thick flour – tiger nut
1/4 cup medium-light flour – butternut squash flour
1/2 cup of binder-light flour – tapico flour
1/2 teaspoon salt
1/2 cup date sugar
1/4 teaspoon of baking soda – if not paleo using baking powder
Wet Ingredients
1/3 cup of avocado oil
1/4 cup of flaxseed milk
2 teaspoons of vanilla – I like it strong, 1 enough for most people
2 egg or egg replacements
If you using egg replacements add 1 teaspoon of apple cider vinegar to egg replacement list
1 cup of Chocolate Chips (63%+ cocoa are best)
DirectionsÂ
Sift together dry ingredients. There will be some larger pieces do not include them. It is why I do the sifting with most alternative flours.
Add together all the wet ingredients (except apple cider vinegar)Â
Mix dry into wet slowly. Add apple cider vinegar if you didn’t use normal eggs.Â
Add in chocolate chips of our choice.Â
Place is refrigerator for 15-30 minutes while you preheat the oven.Â
Use small scoop to dole out cookies. This should make about 24 cookies. Cook for 350F for 8-10 minutes.
