2 Person-ish Green Chili Stew (From a New Mexico recipe) (This is the fast version, you can do everything from scratch in a crock pot if wanted (Or instapot))
Variations: More or less Green Chilis, and Chicken, or Pork - Other variations depending on what's in the cupboard (Change the broth to match). To make Keto - Cook the potatoes the day before and chill in fridge. Or just leave them out. You can use Black, kidney or White beans, but red and pinto are traditional. you an also leave out the beans for Keto diet, too. You can also add mushrooms, which are not traditional (we use lots of variations of this recipe over time, because it's tasty and pretty cheap.) Serve with Warmed Tortillas, and shredded cheese.
1 lb stew beef (or any steak or roast cut up)
1/2 onion (or 1 pkt onion soup mix) or (minced onions to taste)
1 can potatoes (Sliced, New, chunk or make your own)
1 can beans (red or pinto are traditional)
1 can chopped green chilis
Beef broth to cover (1 can, plus added water, or boxed or bullion and water)
1 tsp Cumin
1 TBSP Garlic (more or less to taste)
1 TBSP Pinto Bean Seasoning, or add a bit more onion and garlic powder and some chili (Or leave it out)
Salt and pepper to taste.
1 pkg of Beef gravy if you want it thicker without waiting as long
Sear the meat, if using fresh onion, chop it up and sauté it too. You can do it in the bottom of the saucepan or stew pot if you want.
Pour in everything else, including the juices. Let cook 1/2 hour min for things to blend a little.
Serve.
To scale up, add more of the cans of stuff, or add the mushrooms. Once you get past 2 cans of each, you will need a bit more meet to go to 3-4 cans. It's a great tasting poor-man's stew.
For 7 people - we would mix the bean-types and do 4 cans total, and 2 of the large cans of potatoes, 3-4 cans green chili, 2 lbs stew beef, or 4 full chicken breasts. Then add more water and have lots of tortillas to fill the edges.
The pressure cooker is your friend. (I liked pressure cookers in the 80s, when on the Japanese version of Iron Chef, the Iron Chef Japanese Rokusaburo Michiba used them.) I will totally try this.
